Hey guys, back again with a new recipe for delicious banana and chocolate chip muffins! Mmmmmmmmm . . . . This recipe may be a slight bit more harder than making cookies. But I hope you enjoy them!

Ingredients:

2 cups self-raising flour
Half a cup of sugar
Half a cup of chocolate chips
Half a tsp of salt (don't over do it)
100g of butter
1 large egg
1 cup of milk
1 tsp of vanilla essence
1 cup (2-3) very ripe bananas, mashed

Step 1:

Put the oven rack just below middle. Turn the oven on to heat at 220c (425f)

Step 2:

Spray 24 mini-muffin (or 12 larger) muffin pans with non-stick spray.

Step 3:

Stir flour, then spoon it into the cup. Don't shake or bang cup.

Step 4:

Measure flour, sugar, chocolate chips and salt into a bowl. Mix with fork.

Step 5:

Melt the butter in another container. Add egg, milk and vanilla and mix.

Step 6:

Mash the ripe bananas, add to the liquids and mix well with the fork.

Step 7:

Tip the liquids into the flour mixture, all at once.

Step 8:

Stir together until the flour is wet, but mixture still looks lumpy.

Step 9:

Use two spoons to drop mixture into muffin tins. Don't stir it any more.

Step 10:

Bake for 10-15 minutes until golden brown, and until center feels firm.

Step 11:

After 2 minutes lift muffins out on to a rack to cool. Freeze when cold.

Mmmmmmm . . . These are divine muffins. I hope you tried last weeks cookies. Have a good week and next week I'll show you how to make butterscotch fingers.
