I hate school lunches, they honestly taste horrible. There was one exception, however. That is taco day! I didn't really eat the tacos, though. I got chips and corn salsa. The corn salsa was just absolutely amazing! Now that it's summer I won't have the school's taco day anymore and I found myself craving the salsa. I searched about 12 recipes and made them all to find out which was the exact one. I never ended up using an exact recipe. I kind of meshed a few of the recipes together a few times and finally ended up with what tastes exactly like the school's salsa!
One of the ingredients is rather specific, but I found that the brand tasted better. Feel free to use whatever brand you want, just know that it may not be as yummy!
Here's what you'll need to make one batch:
2 cans of Rotel mild diced tomatoes with peppers
1/4 cup small diced onion
1 can of black beans
1 can of corn
1 tablespoon of lime juice
*Optional* Cilantro
Step 1)
Take ONE can of the Rotel tomatoes with peppers and blend it in a blender. This gives the salsa some of it's juice so it's not as dry,
Step 2)
Take the black beans and rinse them very well. This just gets all the gooey juice of the beans.
Step 3)
Drain the can of corn. If you like your salsa super watery then you can leave some of the water in it. It depends on your own liking.
Step 5)
Take your onion and dice it up to small pieces.
Oh, and stop crying. I know you're excited to eat the salsa, but it'll be done soon!
Step 6)
Put everything in the bowl together. Stir and voila! There you have it! Your very own corn salsa. Just grab some tortilla chips and eat away!
If you like your salsa spicy then add 3 tablespoons of Cilantro. I'd start by only adding 1 tablespoon at a time and then tasting it. It's really spicy so if you don't like spicy stuff then I DO NOT recommend Cilantro at all.
